Three bean salad is a classic salad recipe That everyone loves. This bean salad is made of red kidney bean, white kidney beans and garbanzo beans (chickpeas). A perfect salad for any season and any occasion.
INGREDIENTS FOR YIELDS
For the salad:
1 can (15oz/g) Chickpeas
1 can (15oz/g) Red kidney beans
1 can (15oz/g) White kidney beans
2 Celery stalks
1 medium Cucumber, diced
1/2 Red onion, chopped
2 tablespoons Parsley
For the dressing:
3 tablespoons Olive oil
3 tablespoons Lemon juice
1 teaspoon Dijon mustard
In a large bowl, mix chickpeas, red beans, white beans, chopped celery stalks, diced cucumber, chopped red onion and chopped parsley.
In a separate small bowl whisk all dressing ingredients.
Pour the dressing over the salad, mix well and serve.
