  • 1 onion, chopped
  • 3-4 Garlic cloves, crushed
  • 1 lb (450g) Ground beef
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Paprika
  • 1 can (400g) Crushed tomatoes
  • Thyme
  • Oregano
  • 1 cup Rice, washed
  • 1/2 cup Dried fruits of your choice: plums/apricot, chopped
  • 2 tablespoons Mint leaves, chopped
  • 2 tablespoons Parsley, chopped
  • 1/3 cup Pine nuts

For the liquids:

  • 1¾ cups (420ml) Water
  • 1/4 cup (60ml) Oil
  • 2-3 tablespoons Date syrup
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Turmeric

DIRECTIONS
  1. Soften the cabbage: Heat water in a large pot. Bring to a boil. Carefully remove the core of the cabbage, then, add the cabbage to the boiling water and cook for 8-10 minutes. Remove the cabbage from the water and set aside.
  2. Make the filling: in a large pan heat olive oil, add chopped onion and sauté until golden, about 7-8 minutes. Add minced garlic and cook for 2-3 minutes. Add ground beef and cook over high heat, breaking it apart until no longer pink, about 6-7 minutes.
  3. Add spices and mix well. Add tomato sauce, thyme, oregano and cook for 4-5 minutes. Turn the heat off the transfer the mixture to a large bowl.
  4. To the mixture add toasted pine nuts, chopped parsley, chopped mint, rice, chopped dried fruits and mix well. Set aside.
  5. Assembly: peel the leaves of the cabbage and arrange them onto the bottom of a pan as shown in the video. Transfer the filling into the pan with the cabbage leaves and spread evenly.
  6. In the pan you cooked the meat, place water, oil, date syrup, salt and pepper, heat until dissolves. Pour 3/4 of the liquid mixture over the meat mixture.
  7. Then, cover the mixture with more cabbage leaves and fold as shown in the video. Pour the remaining liquids over the cake.
  8. Place a heatproof place on top of the cake and cook for 45 minutes until cooked or until cooked.
  9. Turn the heat off, allow to cool slightly, then invert onto a large serving plate.
  10. Enjoy your festive meal!
