INGREDIENTS FOR YIELDS

  • 1 pound (450g) Broccoli, cut into chunks             
  • 4 tablespoons (60g) Butter
  • 1 Onion, chopped
  • 2-3 Garlic cloves, crushed
  • 4 tablespoons (30g) Flour
  • 3 cups (720ml) Chicken/vegetable stock
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Paprika
  • 1 Grated carrot, large
  • 2 cups (480ml) Half&half or whole milk
  • 8oz (225g) Cheddar cheese, grated

DIRECTIONS

  1. In a large pot melt the butter, add chopped onion and sauté for 4-5 minutes, add the garlic and sauté for 1 minute.
  2. Add the flour cook, while whisking, for about 1-2 minutes, until turns golden. Pour in the stock. Then add the chopped broccoli, grated carrot, salt, pepper and paprika.
  3. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
  4. Add the cream, cheddar cheese and stir. Cook for 1-2 minutes.
  5. Serve!

    Hi, I made this today. It was good. I only had mozzarella cheese, Parmesab and used 1/4 c skim milk w/half and half. I added some chicken bouillon. Idk it's just okay.
