Amazing chicken meatballs with creamy coconut curry sauce. Easy and flavorful dish for midweek lunch or dinner.

INGREDIENTS

    For the meatballs:

    • 1¼ lbs. (560g) Ground chicken
    • 1 teaspoon Turmeric
    • Salt to taste
    • 1/2 teaspoon Chili flakes/black pepper
    • 1/2 teaspoon cumin 
    • 1/4 bunch Coriander, chopped
    • 1 Onion, finely chopped
    • 2 tablespoons Oil

    For the sauce:

    • Olive oil
    • 1 tablespoon Ginger, grated
    • 1 tablespoon Garlic, grated
    • 1 teaspoon Curry powder
    • 1 teaspoon Garam masala
    • 1 teaspoon Paprika
    • 1 teaspoon Turmeric
    • Salt to taste
    • 2 tablespoons Tomato paste
    • 1 can (400g) Coconut milk
    • 1 cup (240ml) Chicken stock
DIRECTIONS

1. Make the meatballs: in a bowl, mix ground chicken, spices, coriander and chopped onion. Form into balls bout 1 inch in diameter.

2. In a large skillet add oil on over a medium heat. Place meatballs in the skillet and brown them for about 1-2 minutes from each side. Remove cooked meatballs from the pan and set aside.

3. Make the sauce: in the same pan heat oil, add curry powder, garam masala, paprika, grated garlic, grated ginger and cook for 1 minute. Add tomato paste and cook, stirring for 1 minute. Add chopped onion and cook for 4-5 minutes.

4. Add coconut milk, chicken stock, salt and stir. Add chicken meatballs, bring to a simmer. Reduce the heat to low, cover and cook for 30 minutes. turn the heat off and add chopped coriander.
