1. In a large bowl mix coconut oil, maple/honey and vanilla extract. Add oats and salt, stir until well combined.
2. Line a 9x9 inch (22x22cm) square baking pan or 20x25 cm rectangle pan with parchment paper. Press 2/3 of the oatmeal mixture in the bottom of the pan, refrigerate while making the filling.
3. Melt chocolate and peanut butter together. Spread over the oatmeal layer.
4. Sprinkle the remaining oatmeal mixture over the chocolate-peanut butter mixture and slightly press.
5. Refrigerate for 2 hours or until set. Cut into squares.

Did anyone else forget to add the flour to the oats mixture. Followed the direction, did not have the video till after, and after all was in the pan ? got flour left oops. Still was very good. Will try adding flour next time.
ReplyI'm having trouble finding oat flour for this recipe. Any suggestions for substitutes?
ReplyI couldn’t find any myself and I didn’t add any in at all and it still was amazing
ReplyBlend up some whole oats in the blender and voila. That’s all oat flour is. Plus it’s much cheaper than the store bought version.
ReplyI made the recipe as is and they tasted great, but the funny thing is I froze half of them and forgot about it for a couple of months. Thawed em out at room temperature and they were amazing! Tasted much better than when I first made them.
ReplyI really don't like chocolate in anything cooked, but was looking for a recipe for the oatmeal base and topping. My plan is to use a fig mixture as the center. Now I'm hoping that substituting butter for the oil, fig syrup for maple, and allspice for cinnamon will get me the texture and flavors I'm trying to get. Thank you.
