Learn how to make homemade oven-dried tomatoes in olive oil. They taste exactly like sun dried tomato. it's good for salads, for pasta dishes or just as a snack.

INGREDIENTS
    • 5.5 pounds (2.5kg) plum or Roma tomatoes
    • 2-3 tbsp Salt
    • 2-3 tbsp Sugar
    • 1 cup olive oil
    • 2-3 garlic cloves
    • 2-3 tsp tried basil
    • 2-3 tsp thyme
DIRECTIONS

1. wash the tomatoes. Slice the tomatoes in half lengthwise and remove the core in each half. Use a spoon to scoop out the tomato seeds.

2. Line baking sheet with parchment paper. Place the tomatoes cut-side up on a baking sheet. Sprinkle tomatoes with sugar and salt.

3. Heat oven to 200F (90C) and dry until the tomatoes are shriveled around the edges but still plump. about 4-5 hours. leave the door slightly open. The time may change according to size of the tomatoes.

4. Transfer the tried tomatoes to sterilized jar. Between each 2-3 layers put sliced garlic, 1/4 tsp thyme and 1/4 tsp basil.

5. Heat 1 - 1.5 cups of olive oil (don’t bring to a boil) and pour into the jar to full cover. let sit 24 hours before using.

    Delicious!!! I didn't have any Roma Tomatos (they havent started coming off prolifically in our garden yet) but I had many, many Cherry tomatoes. So, I used them instead. I did roast them at 225 degrees in oven for about 2 hrs, then transferred them to my food dehydrator to finish them off before jarring them. The keys to this recipe are roasting them and salting them to bring out the natural sweetness. This is a great recipe that I will use and use this summer. I think I will try and freeze som
